Galactomannan Extraction from Coconut Fiber

ABSTRACT

Galactomannan is a polysaccharide consists of monnase and galactose chains. Galactomannan can be produced from fenugreek nut Trigonellafoenum graecum extraction, family of Leguminoceae. Galactomannan can also be found in coconut fiber for about 20%. Extraction of galactomannan had been done from coconut fiber using methanol as solvent in various temperature, rate of mixing and time of extraction. The extraction demonstrated that optimum condition can be achieved at the temperature 50˚C, rate of mixing of 900 rpm and time of extraction of 5 hours, producing 0.9 grams of galactomannan.
